Probe Placement for box temp?

OK, I have seen the wired probes on Mavericks when NOT in meat being put threw potatoes, blocks of wood, etc.

Here is a link I stumbled on where guys are using alligator clips to clip them right to the grates!!??

Can someone explain the best method to have a probe measure internal smoker temp, and HOW MUCH probe should be exposed to the air if using a block of wood for support?
 
My probe came with a grill clip (hung between 2 wires of the grill) and I soon lost it, so now I use a 1/4 chunk of wood. The hole is loose enough to allow easy sliding of the probe, and I let it stick out 1 inch beyond the wood. The other day I did some ribs and the end of the probe was only out 1/8 inch at best and the readings were off!

I figured using wood was easy, when it got too gunky (technical term) I could throw it in for burning and use another.

I also place it on the same level as the food I'm smoking, or in between if using more than 1 rack.
