chic brine

I just had a thought, how long should a whole chicken be brined? Just a few hours, os should it be done over night?

I would brine a 3-4 lb bird overnight.

I just did 3 of them, brined overnight in the same container. Rinse well, dry, rub and smoke!

I have done both. Over night and for 4 or 5 hours I could never really tell a difference.

I ususally brine mine overnight and that just when I remember to. I some time do things on a spur of the moment. Most of the time really. But I would have to recommand Tip's slaughter house brine too. Really good

I brined one over night last night. Got her on the smoke right now.
