Hey everyone. I am thinking of smoking some babybacks, and have read a bit, but am still a bit confused... So I have a few questions.

1) At what temp should I be smoking them at, I have heard anywhere from 250-275 to 220-240 So what is the best temp?

2) What is best a 2-2-1, or a 3-2-1?

3) Wood sugestions.

Hi Duane,
I too am new to smoken but have done a few racks of ribs. The times and temp you have mentioned are just guild lines to help you get started. You may want to start at 230-240 and the 2-2-1 to see If they turn out like you want them too. I like to smoke them at 220-230 and 2-1-2. When it comes to wood, again what do you like? I like Apple.

they say the 3-2-1 method is for spare ribs the 2-2-1 is for BB's
I don't have any experience with BB's but have made a lot of spares and the 3-2-1 method works perfect so just give it a shot and if it aint perfect for you change it up a little the next time

im typically in the 225 range with lump and hickory. Sometimes I use Cherry, Apple or Oak depending on availability

the 2-2-1, etc. are times for folks who like to foil their ribs. I dont like foiled ribs personally so I dont go that route, and typically my BB's are ready to go at around 4.5 hours off the WSM.

do both

I suggest you try both, do a slab in the 2,2,1 method at like 225-230* and do a slab without foiling like chisoxjim said, and decide which one you like better, as far as wood, I used apple on my ribs, and spritzed every 1/2 hr with apple juice. It is pretty much a matter of prefference and experimenting.
except for the fact that to do baby backs right it takes 4-5 hours.
low and slow, some foil some dont. I, like Chisoxjim like to do my ribs with no foil. I go extra slow at around 215* and they usually take about 5 hours
I will occationally foil if I am short on time. but I personally like the texture and flavor of them unfoiled.
if you are doing several racks, experiment and do them different ways
you will eventually find the way you like them the best!
