Apple/Gouda Stuffed Pork Loin w/ Qview

Bought a 5lb pork loin the other day.
Butterflied it and stuffed it with a diced Granny Smith apple, Jimmy Dean Maple Sausage and some Gouda cheese.
Rubbed the outside with EVOO, garlic, rosemary, thyme, savory, and a little paprika.

Smoked it at around 225 unitl 140, foiled and brought it to an internal of 160 because of the sausage.

That looks awesome! I may have to try that next time I fire up the smoker.

Very nice looking. I make a pork loin where I stuff it with apples and prunes and I love the flavor it gives the pork. I also stuff them with garlic and onions. Anything you can stuff in there makes it taste awesome!
