Yay . . . I Get to Smoke Something

I finally get to smoke something this weekend.

Haven't fired up the smokers in over a month. Been pretty crazy but today I'm going to fire up the drum and smoke some pork butts.

Here's some shots of last night's prep.

The usual suspects . . .



Couple of 5ish pounders, some mustard and some Mad Hunky rub.

Last time I smoked butts, I scored the fat cap. I liked it so well, I decided to do it again. I flipped the butts over looking for the fat cap and . . .

Crazy butcher must have been talking with my doc about my cholesterol or something.

So I scored that side anyway and put some rub on them.



I got a little carried away on that one corner but I figure that's just more openings for the rub to penetrate.

And here they are ready for the fridge.



I put them on at 6 am. I'll let the drum cruise in the 240s or 250s (or where ever it's happy

) and if previous smokes are any indication, I should be pulling them off at 3 or 4 pm. Should be perfect timing for dinner.

Either way, I have no timetable so if they take longer, it's no big deal.

About 5 hours in I stuck the thermo probes in. One was at 161° the other was at 151°. Snapped a pic while I had the lid off.



The wind came up and it's really cloudy now. Supposed to be a big storm coming in tomorrow. Looks like it's getting ready today. Wind shifted and was coming at the drum doing a nice "forced air induction" thing and jacking my fire around. I moved the smoker under the patio, so we're good now. Butts are getting closer to each other temp wise -- one is at 164° and the other is at 161°.

It's good stuff. You should try it.

Well, they finished. The small one finished around 4pm and the bigger one around 5 pm.

They came out great. Bones pulled right out. The drum used a lot more fuel today than I expected. It was a bit windy and in the 40s but usually it doesn't seem to make much difference. Oh well, it was nice to smoke something again. I've got some more pulled pork for the freezer.

Oh yeah . . . and one happy dog!!

Nice job,,,,looked great. I had the same type of weather on Friday...Didn't care for the forced air induction but it all worked out. Nice dog by the way.
 
Nice job Dave. I have really enjoyed my UDS, and the advice you gave me on fuel and getting the temps right have been a big help. I have had several quality smokes. Glad the weather held up for you.
