Hey there from Cola, South Carolina

Just picked up a Brinkman Gourmet Electric for $12. Haven't done a whole lot of smoking but have been making bacon, pancetta, guanciale, and various sausages from the book "Charcuterie." If you haven't checked out this book, it will blow your mind. I've picked up a universal fit thermometer to add to the Brinkman so I can see how hot it's running. I understand they typically run around 290. May do the PID mod to get things under control.

Welcome to the forum. I'd be interested in seeing your pancetta. I haven't tried making any yet but my wife is Italian and would love it if I came up with a good recipe.

Welcome from Austin, TX. So tell us about the book. Is it just about smoking, or is grilling included?

Pics of the pancetta...

Here are the pics of the pancetta. Not necessarily appropriate on this forum in light of the fact that it's not smoked, but it's delicious!
