OK did two butts yesterday but we always have brisket for Easter. This is a 10 pound packer that I got from SAMS club. Personnaly I think 9-11 pounds are the best sized briskets.



This is how you pick a good brisket I saw a man pick this one up and tell his son it was too floopy they needed a stiffer one. I was thinking put that one back I will take it.



pics of both sided pre trimmed I only trim off the hard fat.





All rubbed down



Wrapped and back in the fridge this one is gonna sit for about 20 hours before it goes into the smoker.

You should have gave the man a lesson in picking out a brisket. Once you had that one in your cart of coarse.
