Before I spend money to try and get some casings I thouhgt it might be good to try making some and tasting it before I stuff the stuff. I used the Chicken Chipotle Lime Sausage Recipe from WUTANG. It went over VERY well. Thanks friend.

So here goes, the next time I do this I will leave the chicken a little more frozen.

The next step is buy casings and stuff them, then smoke and grill. The question is do you guys cure your sausage befor you smoke them or just smoke and grill.

The rest of the batch I made was divied up to friends that tore it up. The test patties were gone in milliseconds. I think they were ok.

looks good morgan!!! wutang makes some killer sausage, looks like you did well with his recipie. reg the cure question, if you are going to smoke you will want to use a cure. if going to do on a grille then a cure is not needed as the temp is hotter on the grille than in the smoker.
 
looks good!! man did the chicken ones i made shrink up alot when i cook them, i would have thought they would have been leaner than the pork ones. As far as using cure i think you only use it when cold smoking sausage, not when smoking at normal temps like 200 or so, but maybe im wrong? i have smoked it before like that with no problem.
