Was looking at my probe and it seemed to be not raising enough, so I took my pocket one and checked corn beef and it was 10 degrees higher. After smoke I will have to check the probe one .
 
Yep take both of them to a pot of boiling water and see if they hit 212. I had a brisket a few weeks back and read 15-20 degrees different from one end to the other. Spin the meat a quarter turn or half just incase you have a hot spot on the smoker.
