Well my wife has to work all weekend so I get to cook dinner both Saturday and Sunday night
For Saturday night we will be having pulled pork and Sunday night Tri-Tip.
Here is the start for night #1...
it all starts with this wonderful piece of meet I picked up on sale for a whole $6.84
After a little trimming and a nice quick rub with some mustard I wanted to see how much this baby weighs to get an idea what time I'll be waking up in the morning
Now a nice little pat down of my own special blend of spices
And all wrapped up and ready for a little rest until 2am when the smoking begins for a 7:30 dinner
This is about half way through the smoke and looking mighty good if I don't say so myself:
It ended up being a really cold an windy day, had a hard time keeping the temp above 200 so at about 5:30 I wrapped it in foil and put it in the oven to finish off:
I have to admit that even though I like to let the rub sit on the meat a little longer this was some damn tasty pulled pork and some of the juciest meat I have done!
