Hey ya'll , i'm a tool maker from the northern suburbs of detroit(actually just north of the burbs in the cornfeilds!) i've been learning to smoke meats since fall, i got a new braunfells smoker similar to the one charbroil sells now. I have been watching shows and asking questions of friends who have been smoking for years. I am starting to get the hang of it !!! but i still have lots to learn. i have smoked chickens that you can cut with a fork and ribs that fall off the bone!!! but i haven't taken the leap of faith and tried a brisket yet. tomorrow i'm doing some cornish hens and a slab of ribs!!! anyone have any tips on the hens??? i use charcoal (with a chimney) to get my fire started and i usually use oak with the bark removed for my fire. sometimes i experiment with hickory chunks or cherry pitts for smoke. i also keep a tray of water mixed with apple juice next to the fire for steam.

Thanks for the warm welcome folks, i came here to learn more about smoking , a friend of mine is already here and he suggested that i smoke some fatty's so now i got something else to look up here!!!

Welcome aboard. Sounds like you will fit right in. This is a great place to learn. There is stuff out here for the beginner to the competitor.
