Got a 3 pack of spares from RD, $1.59/lb. Really nice looking racks. Just enough fat.

I took them out of the cryo, rinsed them with cold water and vinegar, then removed the membrane. TGrimmed em up, Rubbed them with yellow mustard then 3 different variations of my rub. Put them on the rib rack on the lower rack of the WSM, filled the top rack with skirt, and tips. Left the WSM alone for 2.5 hours, then pulled the skirt, and used the Jim Beam tart wash for the ribs and tips. Tips will come off in 30 minutes, spares probably about 2 hours after that.

I took a week off ribs, and switched over to spares(i still prefer bb's),

thinking about doing them in a couple rib contests i have entered for this summer.
 
thanks, its a cranberry, Jim Beam, oil, and rub mix I use a squirt bottle to apply well into the smoke.

1.5 cups cranberry juice
2/3 cup oil
5 tsp my rub
1/3 cup Jim Beam.

worked good on some BB's so i figured to try it on these.

tips are done, gonna go see how they are.

bb's are my favorite, but spares are good too, especially the snack portions you get to trim from them.

pics of skirt, and tips downloading, also sampled the spares, nice...
 
nice abatch of spares and tips. I still prefer bb's.
 
Now those ribs look great there Jim. In fact I have some baby backs in the smoker as I type. Now I have never smoked them or even grilled them for I always have had spares but we will see very soon. I'll have plenty of Qview to go along.
 
thanks guys, they were pretty good, I was kind of full from the skirt, and rib tips, so I only knocked out a about 6 pieces of spares, a bunch of snow crab and a big portion of baked mac-n-cheese:

lots of spares leftover, they will be tossed in the freezer to be used in some pork fried rice later in March.

overall another good rib smoke. Ribs seemed to cook quicker on the rib racks. JB tart wash was nice again. Increased the ammount of rub and Jim Beam.

probably no bbq today(could change my mind when I go to the grocery store..)

two of my favorite finger foods right there, ribs and crab.

that was the last of a 10# case of snow crab i bought a couple weeks ago @ Restaurant Depot. $3.50/lb.

Very nice Jim! I wish I could get spares at that price. $2.29lb is about the norm around here. I scored some pork short ribs last week reduced for quick sale @$1.59. Threw them on with some bb's the other day. Short ribs were pretty fatty but the smoked up pretty good.

It's a toss up between spares and bb's for me. BB's if not on sale are over $5.00 a lb. On sale about $3.88

So spares often win the economic battle.
How much Jim Beam does it take to do 3 racks of spares anyhow??
