Smoking Duck Breast

I have some duck breasts in the freezer that I'm thinking about putting on the smoker. Do you guys use any rubs or marinades on your duck breasts? I know they already have a lot of flavor, so I'm not sure if I need to even bother with a rub.

Also, do you mop a duck breast, or just let its fat do the mopping for you?

I smoked a few ducks years ago whole and stuffed them with sauerkraut, they were great. I need to try that again.

I have a general garlic rub that I put on the birds after I brush on some butter. But before you do that, make sure you ***** the skin all over so the excess fat can drain off. Ducks, geese and pheasant all have a layer of fat there to keep them warm and if it doesn't drain out, it will be a greasy bird. After the rub, we wrap ours in bacon. I got a good smoke recipe for smoked chinese duck around here. I'll find it and post it for ya. Best part of it is the materials in the smoke chamber and not stuffing, marinade or rub. Kinda unique.

Sounds interesting. Thanks. I've cooked duck breast on the stove, so I got the scoring of the fat down. I guess I could use the same marinade and see how it turns out. After all, its all about experimentation anyway.

I would much rather eat a farm raised duck than a waterfowl duck. Twice the size and taste way better. I have eaten plenty ow waterfowl (Or I should stay tried to eat) ducks before and I just can't enjoy them. I always tried different things because I feel if you shoot them you should eat them. If I were to get any more I would probably make them into jerky. Unless you get some Nice mallards then I can work with that. Good luck on the duck hopefully they are great.

For wild duck I like to do a fine grind with some bacon or side pork, mix in a packet of onioin soup mix, chopped green peppers, minced garlic, then make meatballs and deep fry until they float. throw em in a crock pot with your favorite que sauce and enjoy. The other thing I do with them is make a ground jerky, whole meat duck jerky is okay but way better as a ground type jerky.
Never had farm raised duck so I cant speak to that, I have seen some posts and it looked really good. Try doing a search.
