OK ladies and gentleman, I have tried ribs a couple of times but now I have a new smoker that I have only used three times. Your cooks today will be myself and my 2 1/2 yr old son. The fire is getting ready and if you follow along for the next couple of hours maybe we will see me not butcher these ribs. This is my first post like this so bare with me as I have never done QVIEW before and am a way amateur smoker. Pics to follow.

Now did ya get that membrane off of the back of them ribs before ya rubbed em?

That oughtta put a little spice on the ol lips... sounds good
 
I pulled the membranes off with no problem. I used a butter knife to get under the membrane and pulled it all off the first try. Its about time to throw them on!!!!
 
Thanks Deltadude, my smoker is a Old Country 20-in Heavy Duty Smoker that I got for Christmas. I have he best in laws!!!
 
Any opinions on 2-2-1 vs smoking them open the whole time? I am about 45 minutes into my smoke holding a strong 225.
 
Update: Just pulled these bad boys out the foil and threw on some ABT's.

Steady temp all day, finally think I figured it out.

Man oh Man those are some mighty fine looking ribs you have there. Now I do like your smoker and it's holding temp good to you say. Now thats a good sign and you are well on you way to some good eats. Now are those some really huge japs for the ABT's or did you wrap them with a bacon blanket. I also have a question on you probe in the smoker is it sticking thur the wood chunk and then the grate too??? But everything looks great so far and I'm hanging on pins and needles to see the finishing Qview.

Those are some huge jalapenos. I bought them at the grocery store on Friday because I couldn't believe how big they were. I drilled a hole thru a piece of wood and put the probe thru the wood and then thru the grate to be at the same spot that the meat was at. I used the wood as a balance for the probe and to keep the probe off the grate. It works really well for me. Thanks for your post!!
