On another website I was told to buy "Charcuterie" by Ruhlman, but here it is recommended to get "Great Sausage Recipes and Meat Curing" by Kutas.

I'm a cheap person, and I don't really want to spend money on both of them if they're just going to mostly cover the same topics, but if they're different, I would like to get them both. So let me have it, do I NEED them both, or is it a waste of money to get Kutas' book and buy Ruhlman's as well?
 
I don't think you "have" to have them both. I've pretty much gone by Ryteks book for the last 20 yrs. or so, and gotten by just fine. I do think I will get Charcuterie at some point just to satisfy my curiosity and see what else can be learned. With either book, and the great resource this forum offers, you should do just fine.
 
I can't say for sure but at the least you should find different recipes in each of these books plus a different opinion on the different curing and smoking techniques. Personally I would buy both of them. They are differant and have some differant recipes for the same sausages and then some curing and other dishes.
 
If you are new at sausage making or curing Rytek Kutas's book is the book to buy. it's an instructional manual with all the info you need to make most any sausage or cure any meat and includes a ton of recipes to work from.
Charcuterie is more of a cook book in my opinion.
