New guy in Southern California

Hi all, my name is Mark. New to the whole smoking thing but been grilling for quite a while. I recently bought a WSM 22inch and have been practicing! I have a large easter dinner for quite a few family members and want to get it right. I am sure I will be annoying with quite a few questions :)

I am an engineer for a technology company so my record keeping is pretty solid. I track temps and times etc throughout the cooking cycle.

This last weekend I tried a trimmed brisket but was using the internal temp for a full untrimmed brisket with the tip on it etc so that came out over done but edible, and the porkloin I cooked to an internal temp of 155 and let rest for an hour and it was PERFECT!

Hi Mark, nice to see someone from Diego way join the SMF. Recording your smokes can really help long-term, it can help you avoid somethings, and encourage the use of others. It;s all good my friend.

How to post Qview to Forum:

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Everyone here enjoys seeing the Qview so be sure to post plenty of pics...

Large ones that us old people with bad eyes can see.

Wow thanks everyone! I look forward to reading all the links, I am absolutly paranoid about safe food handling (one or two bouts of food poisoning quickly cures carelesness) I will definitly check out the links though. I look forward to reading up before posting many questions, trust me I hate being one of "those" newbies.

My qview shots will be forthcoming, photography is a side business / hobby for me so it will be an excuse for more equipment on both fronts :)

First off welcome Mark to SMF. It sounds like you are well on your way to be an outstanding new member of this fine site. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.
Here's a link to photobucket it's free and easy to download pictures. Then if your really new to smoking Look up the E-course.
It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Darkgt, you found the right place to get smokin info. You also bought one of the best charcoal smokers in the market place, the WSM is a consistent performer and with the right pit master can even win big competition BBQ contests. Easter is a ways off, so you have plenty of time to practice and get ready, and I'm sure with the mind of an engineer you will be delivering some primo Q in no time....
