Ok so today is my 18th Anniversary and what is more romantic than RIBS!
I bought a pack of ribs at Costco and started to prep according to bbally's post (great info there).
I learned quickly that my ECB is not big enough for a whole St. Louis Rib rack. So I adjusted by cutting into smaller slabs. Here is the pack cut and waiting for the goodness.
Then came the mustard and rub. The mix is the secret recipe that I am making for future competitions, I hope. It is still not dialed in yet.
Then the final product is cut and ready for the masses. This had to be taken quickly because the inmates were getting restless.
Pros: Good smoke ring and flavor, mostly tender.
Cons: A little too salty and needed a little longer in the smoker and resting.
All in all not a bad smoke. I was blessed to have a very nice TBS. Thanks for checking this one out. Any advice is as always welcome and appreciated.
