My wife brought home a recipe for vegetable beef soup that is awesome. It was meant to do a chuck roast in a crock pot. I read it and went 'chuckie - crock pot - I'll bet it is better smoked..." LOL

Vegetable Beef Soup:

1 - 3 lb chuck roast (I used a 2.65 lb boneless)
2 cups water
1/2 package onion soup mix
1 lb ground beef - browned
3 - 14.5 oz can diced tomatoes (I used Del Monte with Garlic and Basil)
3 med sized potatoes, peeled and cut into 1/2 inch chunks)
3/4 bag frozen green beans
5 large garrots cut into 1/4 inch chunks (I used baby carrots)
1 Green pepper, diced
5 tablespoons beef boullion
1.5 Tablespoon dried thyme
1.5 Tablespoon dried parsley
1 Tablespoon marjoram
1.5 Tablespoon basil
2 tsp. garlic powder (I diced 2 cloves of garlic and cooked with ground beef while browning.

I smoked the chuckie overnight to 205 and it literally fell apart. I placed the meat and the rest of the ingredients in the crock pot and cooked on high for 5 - 6 hours.





Before the potatos and green beans:


The smoke is a subtle flavor with all the other spices - but it definitely does enhance it. It is snowing and blowing here on the west coast of Iowa and this will be a great meal with the Daytona 500 on the tube....!

Here it is with all the ingrediants in. I also have the bread machine making a loaf of Country White to go with the soup....MMMMMM! Can't wait...
