smoked some more ribs, and they turned out as before with the ham like inside. thought i took more pics but oh well.

Glad you liked your ribs. What did you do that gave them that ham like flavor?

Your Qview pics in the post are a bit small...any way to resize them when you post?

Now, I always spritz my ribs mostly with fruit juice of some sore. Sounds like you have an inside track for greaqt ribs, If you spritz with holy water, do they come out heavenly?????

You need to set your photobucket account up so your pics upload at 640X480, you have it set at thumbnail is why you get small pics.

You need to click on link options and set the options like the ones in this screen shot so the images are full size.
 
using imageshack, i dont really care for photobucket.
did you click on the thumbnail to enlarge it?
 
I really do like those ribs for sure. But you also said that they were ham like in that cause of the color or is it the texture??? they do looks really good and tastey thou.
 
I havent pinned it down a of yet but its more texture then color but both are there but im not short on ideas. more testing this spring nd summer

good deal on the pic size put that in my notes.

they were excellent like the smoked Turkeys you get at the store or such,
but it started last summer when i noticed it and i cant believe that Tyson or BP would cure 1 out of 10 or 20 and i didn't keep any logs about it and it became more frequent late summer, i dint know maby next step in smoking evolution for me, ill do alot more testing this summer to pin it down.
 
Are you marinating them over night or rubbing them with a heavy sugar rub the night before?
Do you foil? I generally find that meat is more tender after being foiled.
