The wife decided I needed to cook yesterday. I don't know why, she had only worked the 7p.m.-7a.m. shift Saturday night. Well in scrounging around in the freezer, I came up with two whole chicken breasts I had smoked about a month ago. Not wanting them to get burned from being in the freezer too long, I set them out to thaw before going to bed on Sat. night.
I decided to make a chicken, broccoli, cheese casserole out of it. The result turned out wonderfully. Here were the ingredients:
two whole chicken breasts (diced)
one cup of white rice (could substitute brown or, my favorite, wild rice)
one can of condensed cream of chicken soup
one can of condensed cream of cheddar soup
1/2 soup can of whole milk (you can substitute that yucky 2% here if you want to)
one cup of chopped broccoli
1/2 cup of grated sharp cheddar (hey, it was in the fridge)
five or six slices of smoked, sharp provolone cheese
your choice of seasonings
Something quick and easy if you don't have the time to do a fresh smoke.

- Begin cooking the rice per instructions.
- In a mixing bowl, combine all other ingredients except the provolone cheese.
- Stir ingredients to a uniform consistency.
- Combine the cooked rice with other ingredients, blend to a uniform consistency.
- Place ingredients into a casserole dish.
- Lay the slices of provolone on top of the ingredients.
- Bake one hour @ 225F or until cheese turns a golden brown.
- Allow to rest a few minutes after removing from the oven.
