Well, I decided to smoke my quail that was given to me by a friend. Just learning, so I think it went alright I marinated in Italian dressing, put some Duck Commader rub on them, wrapped in bacon and smoked over pecan/hickory for about 2.5 hours. Turned out pretty good. I need to work on flavors, but that is part of the fun, right??!!
