This will be the first time I have tried them in my GOSM. Kinda forced into it with the amount of spares (4) that I will be putting on the smoker. Mine is a 16 x 16 model so I must cut the racks in two. My concern with untrimmed spares is the meat on part of the rack will kinda flop over. I suppose I could trim them, but don't really want to. Has anyone had any issues with this?
Also, does anyone have any photos of their Rib Rack in action?? Would love to see them.
