Salmon balls

0.52 pound raw salmon
3 tablespoons fish spices
1 tablespoon breadcrumbs
1 egg yolk

For the crust
Bread scrums

Grind the salmon
Add the fish herbs, bread crumb and egg yolk
Roll it into balls and roll in bread crumb.
Do not smoke too long or they become too dry.









Salmon roll

Puff pastry
Dill
Smoked salmon
1 egg yolk

Roll out puff pastry and then top with smoked salmon sprinkle on same dill.
Roll everything together in a sausage.
Cut a disc of about 1 inch
Brush with egg yolk

Smoke short and intense, certainly not to smoke too long or they become too dry.

I really like this one geert you out did yourself again. I really like the puff pastry with the salmon it makes such a nice roll. Your presination is really getting good too.

Your knives look like a professional knife that is sold under the name Global. They are interesting sets and have a handle and blade made the same way the knife in your picture shows.
