I had more tenderloins than I wanted to stuff so I decided to do something a little different. I made two batches of these out of two tenderloins. I sliced them up like chicken fingers. One batch I put some rub on and the other batch I marinaded in Yoshidas Hawaiian Sauce for a couple of hours.
I wrapped them up with bacon and onto the smoker. I used JD oak and some apple. They only took a little over an hour. I pulled them out just before 155 and slammed them under a broiler to crisp up the bacon. They turned out really good. The only thing I would do different when I do them again is to pull them out before they are done and dunk them in whatever sauce I want to eat them with ..... maybe the raspberry chipotle.
These things are a really quick and easy appetizer. Fantastic to sit around and munch on while other stuff is getting down without a lot of prep or smoke time....
