any one smoke eggs before. thinking doing some like a hard boild egg. any thoughts onhow to do them?

Yes I have smoked eggs before. You can either put the egg in the smoker raw and it will come out like a hard boiled/slightly smoked egg. Or you can boil them first and shell them and then put them in the smoker but do a cold smoke on them I did a hot smoke and left them in to long and they got really hard. The smoke does penetrate through the shell and the egg will get a smoked look but you don't get to much smoke flavor. Next time I do them I am going to boil then shell them and cold smoke them. That should give them a nice smokey flavor.

I take mine right from the fridge to the smoker and cook for about 2 hours then as soon as they come off I place them into cool water to stop the cooking process.
Make sure you don't put them too close to the heat because they can explode.

I smoke eggs all the time. Take them straight from the fridge to the smoker. Smoke them at 225-250 for about 3 hrs using whatever wood you choose. Make sure to keep them away from the hotspots or the shells will explode.

Yes I have smoked them a few times and they are good to. Just throw them into a bowl with alittle mayo and some relish and your ready for some sammies. Thats Good Eats

wasn't overly impressed with smoked eggs. I tossed them from the fridge right onto the grill. Cooked like a hard boiled egg but didn't taste much like smoke.

They will not have a big, smokey flavor. It is a subtle flavor and alot depends on what wood you use. The stronger the wood flavor the more smoke flavor you get in the egg. Mesquite and hickory are my favorites.

Great timing!

I am heating up the BGE now to try a couple dozen for the first time. Will Q view results later or tomorrow. Going to do them in the shell at 225-250, I have read other posts, time seems to be anywhere from 1.5 hours to 3 hours. I plan to do deviled eggs. Any concern with under or over doneness in this time span? How have you found they peel?

I cold smoke,boiled and shelled,,,,light smoke it is best for me.

Sounds like a good plan.
As for peeling, it all depends on how fresh they are since the fresher they are the harder to peel so if you have had them in the fridge for a week or so then even better.
I do mine for 2 hours and prefer the way they come out at that temp but a little longer doesn't hurt.
Most difference could be an overcooked yolk that would have that green/gray ring around it but that is completely safe and when mashed and mixed with ingredients for deviled eggs isn't even noticeable.

These are fresh, less than a week. I was going to smoke, then fridge over night, then do the 15 seconds in boiling water and ice water plunge before peeling tomorrow to do deviled.
I read that technique either on this site or another, never tried it yet.
They are for a group of guys I play cards with, so if they are ugly no big deal lol.
I will target 2 hours based on your post and see what happens. An additional consideration is i have large brown eggs and much smaller green eggs, so I am figuring on pulling the small ones first maybe let the big ones go an extra 15-20 ins. Thanks a lot for the post!
