Good evening, I just stumbled across this page yesterday looking for some new que ideas and I am blown away at the size of the community on here. I am currently in the Marines and stationed in san diego. A good friend of mine from south texas turned me on the smoking, and like a bad addiction i have yet to stop. I look forward to meeting some good people and hopefully picking up a few tips along the way. I added a few pictures of the smoker we built in the shop a few months ago. My unit is having a change of command ceremony next month as well as a going away party for a few of us that are leaving to afghanistan and i have been tasked with smoking some chow for the event. Getting ready to put the smoker to some serious use and with 2 Colonels on deck it better be tasty.

Nice work on the smoker, now when you either get out or get orders to new duty station, can you take the that smoker?

Im currently stationed at miramar, but i will be in afghanistan soon. As far as taking the smoker with me when i leave, it prolly wont happen. It is made from mostly 1/8 inch steel and we guessed the weight around 600 lbs, so it would be a tough move. I built another smoker when i was stationed in yuma about 2 years ago which was even bigger and to my knowledge its still there. I guess building them for the unit is slowly becoming the legacy i leave behind.

I have been looking for some advice on how to tackle feeding about 40 people for the ceremony we got coming up. Normally when i smoke its only 1 brisket and maybe a rack of baby backs on my smoker at home. The goal for the ceremony is to do 3-4 briskets and maybe about 6 racks of ribs, and the chow hall is gonna provide some burgers and dogs. I got a couple guys that are gonna help me with the meat. Since good smoking wood is scarse in socal the only place i have found that sells mesquite (my preference) sells it in 40lb bags and they are $25 per bag. My guess is it will cost me a small fortune to smoke the meat for about 14 hours, so i was gonna have the guys each put a brisket in the oven about 8 hours prior and then bring it in to the shop to finish it on the smoker. I have been trying to research it but i have yet to find a lot of info on doing this. The goal is to have the food ready around 1130 so if anyone has any ideas i would love to get some advice. thanks for all the help gents.
 
Hello Kyle, and welcome to the SMF family. I'm glad you joined us. First I want to say thanks for your service to our country. May God watch over you and your unit while in Afghanistan.

As far as advice on your brisket dilemma, if part of the cook needed to happen in the oven instead of the smoker, I'd do it the other way around: into the smoker first for as long as possible, then into the ovens to finish. That's just my 2 cents. Good luck and happy smokin'!

What date is the event? If I am in town I will be happy to start them in my SmokinTex and bring them down - i can do 4 easily - just depends on the date - I cover the whole state for what I do. Send me a PM and lets see what I can do
