So I tried the rivetstrami recently.

Excellent!

My question is, could you use the same injection / cure rub on turkey breasts? The rub is made in a batch, so would that amount be correct, or would you figure out how much turkey breast you would have and adjust the rub, then use it on all the breasts you had?

You can do it all you want to. I have onjected and rubbed the legs and the wings and smoked them and they were great and a real good flavor too. So I cann'e see why you couldn't do the breast then
 
I make turkey pastrami all the time
I use the same recipe as I do for the beef and venison
pastrami
I use the corned beef brine recipe out of Ryteks book
brine for 7 days just like when Im making corned beef
then put the pastrami spices on and smoke it over cherry wood
