Stuffed loin with plenty of Qview.

So I saw a pork loin and they said it was gonna be stuffed with some baby spinach and some feta cheese so I made one myself. I started out with half a pork loin and pounded it alittle thinner then stuffed it.

So I stuffed with some baby spinach, assorted peppers, alittle bacon bits, some shallots, then covered with feta and cheddar cheeses.

Rolled and rubbed with some Gates Famous rub from Kansas city from an exchange with The "Dude" Abides and how sweet this stuff is.

In the smoker for a couple of hours an at about 130*

Out rested and now the slicing. It looks awesome and it taste just as good as it looks with a little smoke ring but some really great smoke flavor from the apple and maple blend of chips and chunks.

My plate of salad with some baby spinach and lettuce with all the fixins to go along with some really nice stuffed pork loin fattie an good ole wally water

Thanks for looking nad hoping that you enjoyed it as much as we did. And you cann't read it but tomorrow sales adds whole bone in rib eye for 3.99lb guess where I'm goning in the morning and then in the afternoon too.

WOW - that is one awesome looking pork roll, and nice touch with the spinach and other stuffing - super color, I'll bet that was tasty.

At what temp did you smoke it? Looks like one more thing to add to my to do list.

Did you cut that loin several times to get that baby so big???? It looks huge when it is flat. Way bigger than just cutting it in half.
