Well i guess its a little late to call this a build cuz its already finished and had a batch go through with little to no issues

i do have a watlow pid controller that is ready to be put on but i dont see any reason because this durostat is doing just fine

its vented thru the roof so we can smoke all year round in any weather to.

You have a BBQ restaurant, and are doing homework?
You have a BBQ catering co. and use your garage for a backup kitchen?
You are a backyard BBQ enthusiast, that regularly feeds every neighbor withing a 1/4 mile?

Awesome stuff man, if you don't want that PID setup on your old smoker, I will pay the freight to my house

i guess we could be called backyard enthusiasts, A deal fell in my dads lap where we got the old nonworking fridge for free so we sold our old smoker for 500 and put it towards the new fridge. we do alot of pepperstick salami for ourselves family and freinds. occasonal batches of lake trout and salmon.

we might be lookin to get rid of the watlow pid controller cuz this durostat is accurate enough for us right now

A few years ago we were scrapping restraunt equipment a couple of times a year and now that I have a use....nothing!

I say that there are two extremes to BBQ pits. An old brick wood burning pit and a new shiney SS walk-in sized watt burner
 
Is there anybody who could answer on a ss freezer build what do you do about foam insulation in the door and freezer body  i would like to get to 275 deg
There are some people that totaly remove all the insulation and replace it,

we just took the section that we cut out for the burner and through it on the grill and cranked it up and checked it at every 100° to see for fumes/expansion it was fine al the way up to about 350 after that it started to expand alittle but we had the grill up to 500

The hottest we ever will need to take it to will be 220 and it has been up to 200 we are deffonetly looking for a high temp magnetic door seal becuase this one is starting to tear

Where the burner comes through the side wall we did cut out about 3inches of foam insulation and packed it with high temp insulation but thats all we did.
 
I have a large dough proofer I will be building into a smoker in the near future.  I'm just wondering how many square feet you have up and down, and how well the smoke daddy inspired generator works?  I would like to get a little more fancy on the new smoker than the current one I built, so I am trying to figure out all these gadgets (PID, etc.)  Thanks

I'LL have to figure out the dimensions sometime, the smoke canister works good and puts out a ton of smoke but the aquarium pumps dont last very long so we run a line from the air compressor now to feed it air. I have a pid controller now that i just need to wire up, it will store 8 recipes and ramp

So the PID is just a temperature controller?  I have heard of ramp but not sure what that is.  About how much did it cost you to build your generator, if you don't mind me asking?
