noob ? re: my first smoked Picnic

I smoked my first picnic yesterday.
.88 a pound @ Albertsons.

I removed the skin.
Was that the right thing to do?
My assumtion was, I would get better rub and smoke penetration.
Was I right?

Also I know have a pan of lovley juices. What should I do with them?
I'm thinking of using them in beans. Is there another use?
What do you do?

I never got a butt with skin on but I DO remove most of it when I get a ham. I leave some just up by the shank end. IMHO, the skin will block the spices and the smoke from the meat..

I never use the juice for anything so I'm no help there. Leave it in the pan for now to keep the humidity up and prevent drying..

When i do picnics I remove the skin and trim down to about 1/4" fat but removing all of it is perfectly fine too.
Any juices I would chill, skim the fat and add into the pulled pork for more tender juicy smoky flavor.
You could also use them in beans, cook some rice with it instead of water, make a chili and add them in, pour it into a coffee mug and drink it PDT_Armataz_01_05.gif

Maybe not that last one...

Congrats on that 1st picnic, I know it won't be your last. I do a bit of trimming myself. I use the juices whenever I make rice, adds flavor and helps the rice not dry out. It's all good my friend.

I did my first ham last night (posted in the wrong thread though) and I removed the skin afterward. Just trimmed it off and pulled the rest of the meat after it was cool enough to the touch. Made pulled pork tacos with fried corn tortillas for lunch today - awesome. Not sure what the standard is but it worked for me.

I have always trimmed the skin off of a ham that I have smoked. Then it will accepted the smoke and rub alot better too. Congrats on your first ham and don't forget the Qview.
