Looking for a recipe for smoked chili dogs

Doing a big venison grind and stuff tomorrow night and a buddy wants to try to replicate some sausages a local locker made a couple of years ago. He calls them "chili dogs" and they are made with what seems to be natural casings, cured, and smoked. They seem to have some chili seasonings and even some beans added, but no idea what else. We are short on time, cannot order pre-packaged seasonings, and in need of a "home brew" recipe. Anybody have any recipes that sound similar?

I have recipe for the coney sauce you put on coney dogs. Very similar to what you are talking about. Don't have access to the recipe right now but can post it for you first thing in the morning if u r interested. No exoctic ingredients involved unless you consider lard exotictongue.gif it's a old recipe from a old coney island place we use to have locally

I know first you wrap them in bacon then you stick them into the smoker and about 45 minutes later you pull them and then add the chili and onions and slaw and you have some really good dogs.

So we couldn't find a recipe but just decided to wing it and try something new. We ended up making a 25 lb batch of ground pork and venison, added the cure, added 2 large cans of Hormel chili, stuffed into hog casings, and smoked it the next day. Turned out ok but a little dry- definitely could taste the chili though. Next time will add 3-4 cups of water and some extra chili powder and should be damn good.
