One of my coworkers retired in December. The party was this past Saturday. Friday I started with 4 boneless butts. Injected and rubbed down.



Into the smoker they went. Sprayed with apple juice every 1.25 hours after the first 2 hours.

Here they are at 160 about read to be foiled.




Didnt get any other pictures of the smoke sorry. I pulled them out at 11am and into the cooler. I used the disposable catering trays when I foiled them. When shredding I used a gravy separator to remove the fat from the juice in the trays. Then coated the pork with the remaining juice.

It was a great night. Served the pork on Hawaiian Sweet rolls so they were like little shooter sandwiches. Fed 40 people with a ton left over. Got lots of praises on the pork which is always nice. Good news is that I warned them all that if they completely covered the pork with BBQ sauce that I would cut them. Lucky for them they listened.

No they didnt cook faster. Still took 13 hours. I cooked between 220-230 the whole time.

Looks great! And I know what you mean about the sauce warning to the coworkers, i had to do the same thing last time i took PP in to work. Awesome job.
