brand new to all of this. even have a new smoker.
masterbuilt with electronic controls. as a matter
of fact, it is going now, although i dont think its
going to have a happy ending. should have found
this site about five hours sooner. we shall see.

well, i am trying to smoke summer sausage. mixed half venison, and half pork. stuffed into casings. put in smoker. wood chips are store bought mesquite. i put temp.at 160 degrees for about four hours, and the inside temp of meat is only 120. i thought it would have been done by now. sausage rolls are about inch and a half diameter. should i take the temp. up, or just leave it.
 
Yikes, I know nothing about smoking sausage. Hopefully I'll bump it up and somebody that knows a little more will be along quickly.

C'mon SMF...don't let the newbie down.
 
Hey, pop into the sausage room and post this. I'm afraid that since it's in roll call, people may not see it right away.

Put something in the title like HELP NEEDED ASAP and people will pay attention.

First off welcome Rccub to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
