the breakfast hash i did with some of the leftover chuckie was awesome last night. Took pics, but didnt have time to download them, hopefully tonight.

Wow Jim-great looking chuckie and I like the taco idea. I did a couple of chuckies in my EUDS last Sunday-1 for dinner with garlic mashed taters and was planning on using the other for my smoked beef enchaladas for tonight. Taco would be way easier and I'm going to have a time crunch tonight-gonna watch the oldest grandson play basketball.

thanks dutch, I agree tacos are pretty easy/time friendly(but enchiladas are pretty good too... PDT_Armataz_01_12.gif ), I was kind of cooked out Sunday night so it was nice just warming some tortillas, and tossing the meat on them for an easy dinner

As good as the tacos were, the chuckie hash was really good, hoping to get the pics posted when I get home. Tonight is more leftovers from the weekend, udon noodles served in some smoked turkey broth(tossed some in the freezer after Thanksgiving) and topped with leftover bb rib meat from the weekend.

Im starting to get a handle on the smoked meat leftovers i think.

That chuckie looked great, I've tried chuckie with many things but just realized that I never have with tacos.
Always coming up with such great looking dishes, lost track of haw many things you made me put on or bump up on the to-do list PDT_Armataz_01_34.gif

promised some pics of the killer chuckie hash i had for supper last night.

basic recipe, (1) onion chopped and sauteed, about5 small potatoes cubed, and deep fried, a bunch of a smoked chuckie pulsed in the food processor. Seasoned with salt, black pepper, and garlic powder.

really nice, swerved with 3 yolky overeasy eggs.

Another great thing to try, out of all the hash's I had made and smoked icon_smile.gif
I haven't used chuckie in any, and those eggs looked perfectly done, gotta have a nice runny yolk PDT_Armataz_01_34.gif

I broke one of the eggs on the transfer I really like mine just cooked like that..
