can you leave your meat in aroasting pan while smoking? Thought I saw somebody on BBQ Pitmasters do that last night.

I also thought I saw somebody trim the big fat layer off the top of their butt before smoking? Is this usual?

Also do you smoke fat side down or up or does it matter?
 
Everything you asked is up for [font=&quot]Interpretation. Some leave the meat in a pan and some don't, some trim the fat off and some don't and some say put the fat side up and some say put it down. Basically everyone does it a little different and I don't think there is a right or wrong way to do it. You just have to try it both ways and experiment and see which works best for you and what you think tastes better.
