How big of pieces of wood should i use in a propane smoker?

No set rule, but I usually use 2 to 3 inch pieces.

About the size of your fist, course I have a large fist, so my chunks might be larger than your chunksicon_mrgreen.gif, but I think you get the idea.

Chunks

Smetimes I notice a lack of smoke over a long period, so I just turn them over to a fresh side and it works.

i use a combination of smaller and larger and sawdust
especially when I smoking at lower temp. the dust give me smoke sooner
then the smaller chunks, then the bigger ones. I can get a good 4-5 hour of smoke in my GOSM using this method.

I keep both on hand. I like the smaller ones for light smoking and the larger type for long smokes. Try some of each and take notes of smoke quantity / duration from different sizes..
