Anyone try chicken or turkey balls?

Thinking of trying to do some this weekend. No, not what your brain took you to...I want to do up some ground turkey or chicken and smoke em, sauce em, etc. What sauces or recipes have you guys tried?
 
Hmm, my poultry always has them removed by the time I buy them.

I don't know if you have tried it yet but try Jeff's rub and sauce. They are very good and really easy to make too. Plus it will help support this place that we like so much. Other then that try your smoked turkey/chicken balls of fire and let us know how they turn out.
 
I make wild duck balls all the time. Grind them up, add your favorite rubs/spices, chopped onions, green peppers, jalapenos, make a ball, wrap in bacon, poke with a tooth pick and throw in hot oil until they float. But I think the same could be done with turkey or chicken (totally different type of meat butt..) and in the smoker. Just need a good sauce to dip in when you are done! Might try to place a chunk of cheese in the middle for some added goodness (and grease). Have fun!
 
I do a Fried Buffalo Chicken Ball for Superbowl and since I now have a smoker I am going to be doing a trial run of them over this weekend.. I'll post up a Qview when I get them made up.
