Did 2 racks of spares yesterday and a 7lb butt. Cooked at 225 deg w/ Pecan chunks. Was a nice chilly day for smoking. Everything turned out great. Also did a batch of beans. I got a fyrer for x-mas and did up some onion rings and zuchinni sticks. Don't have pics of those but man that was fun frying. Could be a bad thing so I'm gonna have to limit myself to once a month or I'll be in trouble!! lol

I took the butt to about 170* then wrapped it and put it in the oven to finish it off. I wanted to take it to 190ish and then wrap it and let it rest as the foil or no foil butt thread made me want to experiment. But it was a long day so I said screw it. I don't foil my ribs and smoked them for about 6.5-7 hours, sauced for the last hour and they we're perfect.

Man that looks great, I would have dug in to a plate of that 'Que, and throw in some fried onion rings and Zuchini sticks would have been great too.

I love the looks of the ribs and pulled pork. I too have been doing my ribs without foil. I also like the Mojo of your Smoke Vault. From the smoke stains around the temp. dial, hinges I see that it has been serving you well. I know I love mine.

They sure were! Wow, very, very nice looking ribs and nice to know you get such great results with no foil. If they tasted half as good as they looked there were sure no leftovers, either.

Your smoking was a definite success, and with the sides you had, there was a serious feast going on! Congratulations.

Thanks everyone! We had the PP tonight and it was good; served w/ a w. carolina sauce. I love the Smoke Vault. I have it fine tuned but it took me a few months to learn the quirks. I'm a little lazy cleaning the front but I'll shine it here soon. Happy smoking!
