Just received 27.5 lbs. of pork belly "Freebie Samples" from a distributor, to make some bacon out of.

There's no way I can cure & smoke all at once, so how long is it's life in the freezer, before I have to cure & smoke, and how long is it's life in the freezer, once it's cured and smoked? It will be vacuum packed.

Waiting for my new MES to be delivered.
