Hello from Wisconsin

Greetings, I have been smoking fish and meats on a recreational basis for about 45 yrs. I thought I was somewhat accomplished concerning this art form. Boy was I wrong! I have learned more in a few short weeks reading this forum than I was able to learn on my own in all of those years of trial and error. There are some very knowledgable people on this forum and their advice is invaluable. I generally mix up and smoke about 250 lbs. of kielbasa for the family each year. We have a rather large homebuilt that will hold 100 lbs per session. I have a smaller homebuilt and for Christmas I received a GOSM from the family. The portable is great and for Christmas dinner I smoked up Cornish Game Hens and since then I have smoked 25 lbs. of venison snack sticks, The GOSM is a bit small so I can only do about 12 lbs per session. Anyway thank you folks for the great advice.

Hey Tom, welcome aboard. I'm your neighbor to the West. Yeah you said it, lots of great info here. I only wish this place was around 20 years ago. I too make a few batches of Kielbasi, the wife is half Polish but its not her fault LOL. Just kidding. Shes from PA and loves the Kielbasi as do I. Hope you stick with us for a while, you will sure learn things and probably broaden your smoking adventures as well. Take some pics of the big smoker you guys have, would love to see it. Posting pics here is easy, set up a photobucket account, free, and post away. Great to have you with us, look forward to seeing more of your posts in the very near future.

Welcome to the SMF Tom, we ride cycle with a couple from Phillips so we get over there a few times a summer, lots of nice roads to ride in Wisconsin

First off welcome Tom to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.
Here's a link to photobucket it's free and easy to download pictures. Then if your really new to smoking Look up the E-course.
It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
