Well I rubbed and injected my three butts yesterday intending on making pulled pork today but with this blizzard I wasn't able smoke them today. I didn't want to put up with the 40+ MPH winds and all the snow plus I have people that are trying to come into town a day late for Xmas so I wasn't able to smoke until 8-10PM tonight since I will need to be around for Xmas. The meat was frozen and I took it out of the freezer and it was thawd out by last Sunday. Do you think it will be ok if I wait until tomorrow to smoke them. I was getting a little worried about even smoking them today. They smell fine so I think they should be ok. They were in the fridge this whole time so they have not gotten warm.
