Hi everyone! Merry Christmas! Just found this site and can't tell you how psyched I am. Was given a smoker awhile back and have been dying to try it out. When I got it, I had grand visions of perfectly smoked meats, cheeses and peppers dancing in my head. Still do, but it's gonna take a considerable amount of help from you good folks before I'm anywhere near competent. I'll take my questions to the main forum, but just wanted to say Hi.

Hi TasunkaWitko. Chinook? Gotta be cold today (it's maybe about 12 in the missoula area). My Dad lives up in Choteau, hopefully popping a brace of pheasants as we speak. Speaking of pheasant, what are the smoking possibilites?

The possiblities for smoking phesant are limited only to your imagination. Brines and rubs are almost endless. Good like and happy smokes welcome to the SMF
