chill removal process beginning

Your ribs will be the best of the year you wait and see. So smoke them and let's see.

mballi3011: let hope so. i got "hood-winked" by the wife's family for these.

here they are turned.

this guy decided to help today since the wind was nowhere to be found. he would hardly even go outside yesterday to "potty" in the 50 mph wind gust -1 wind chill weather.

forgot to take a pic of the ribs before i foiled them, but i took a pic of the trimmings (aka smackes...smoke-snacks)

You have a beautiful pit man. I had a gorgeous 2 yo rednose named ferrari and when i moved a couple months ago from my house to a apt i had to give both my doggys away. All i can say is im heartbroken and now i dont even know where the dogs are. Those ribs look good though man.

Great looking ribs....
I also like your Smackes....ahem... an important component of the Chef's quality control program.....
