On my Oklahoma Joes smoker, I wanted to try out my first brisket smoke. It was 70 degrees out, no wind. Costco 4.75lbs brisket. Put in at room temp with a jalepeno rub @ 1 pm. Ladle'd apple juice over it ever hour or so. Maintained temp @ 225-250. At 4pm my temp reached 174. Foiled it and threw it back in. Once it hit 190, I took it out, wrapped in heavy towel and put in microwave (not on) for 1 hour. It turned out fantastic.

After setting, cut into it. Cut a lil too thick

Looks great!
