Pulled Pork Enchiladas

Wanted to whip up a really quick and easy dinner tonight using some of the pulled pork from yesterdays smoke. Found here if you're interested

Here's my ingredients
1 lb-ish of Pulled Pork
4 - Flour Tortillias
1 cup of Shredded Cheddar Cheese
1 can of cheapo Enchilada Sauce
Sour Cream (optional)
Hot Sauce (optional)
You could add a lot more to them, but was going for fast, cheap, easy and what I had on hand.

Maybe I should've added "ham" to the list. That's Dudette Jr., whenever she sees a camera she has to get in front of it.

Spray a glass cassarole dish with some cooking spray.

Put the Pulled Pork in a bowl, add in half the cheese, and half the can of Enchilada Sauce and mix it all together.

spoon some of the mixture onto the tortilla

put them into the dish, seam side down. And repeat. I ended up with only 3, which worked out well. Means I've got one leftover for lunch tomorrow.

cover with the remaining sauce and cheese

375*F oven for 15 minutes or so. The pork is cooked so you're just heating it through. It's kind of how you like your cheese at this point. I like mine to just start to brown, but the wife doesn't.

topped with a little sour cream and Cholula Hot Sauce and a side of rice.

Dude Jr. got jealous that his sister was going to end up on the SMF. So had to snap one of him too. The kids just ate the PP dipped in ketchup.

try the green enchilada sauce the next time...good for pork...its also good for chicken...

Those look pretty good! BTW, enchiladas freeze really well. We usually make a couple batches, eat a few and wrap the rest in cling wrap and freeze em. Then they become an easy snack or dinner.

Those enchiladas look great Jay, been a while since I made some and once again you have got me wishing for a plate of that.
Got a chuckie on right now with some Montreal seasoning and a few other seasonings, saw yours yesterday and had to do another chuckie, so thanks for the inspiration.

Keithace, I like the green chilie sauce too. Wife thinks it looks weird so I only get to order it when we go out for dinner. LOL

Hey CUclimber, my first wife was full blodded Mexican. When our son was born her mom came to stay with us for a couple of weeks. Before she left, she made up a batch of about 50 enchiladas and indiidually wrapped them for the freezer. Her family owned a couple of resturants, great food. Funny though, my wife couldn't boil water.

FiU, can't wait to see those chuckies get posted. Last time I did enchiladas I used pulled chuck. They were awesome. Lots more smoke flavor than in the PP.

lvrgsap, thanks. Yeah, it's a little weird right now. Wish I could say I was on vacation. More like I just closed up my office and moved the operations to my house to ride out this economy. So in addition to trying to find a customer here and there to keep afloat, I'm also offically the new "house manager" as I like to call it. More like kept, stay at home husband who had a little extra time on his hands this week. I'm not minding it yet, actually giving me a little time to smoke and do some other cooking, which is nice cause I enjoy it.

BuffaloSmoke, thank you. Give them a try. They're really easy since the meat is already done. It really did take me about 10 minutes to prep them. They taste great too.

You sure have been really busy with the smoker and now your moved inside with the heat I guess. But those enchiladas look awesome and yummy too. I wish I had some little helpers too.
 
We get a lot of Mexican food here so we are tough on the quality of the food - I think it is only right that you bag up some and ship in a referigerated unit to me for judging - I in turn will find some really nice avos to send you in return - LOL - they sound like they are off the chart

Good looking enchiladas! That may be "cheap" enchilada sauce, but it's probably the best one out there. I like to make mine with corn tortillas and I do half with red sauce and half with green.
