Greetings from Nebraska!

My name is Charles, I am definately a "just learning" type of guy at the moment, I've had my smoker, a Masterbuilt digital cabinet, for about a year, and i've used it probably 6 or 7 times. I have tried brisket, pork shoulder, ribs (baby back and st louis), and today I am doing a chicken. The pork shoulder and brisket turned out the best, the ribs tasted good, but I don't think that I prepared them correctly (pre smoke) because they weren't exactly easy to eat. For xmas this year, I am planning on taking on a turkey, hopefully that doesn't end in disaster. Overall I just like sitting on a sunday afternoon and putting a good smoke on something! Glad to be hear, hope to learn alot!

About your turkey...... Get over to Jeff's newsletters, he's got some great advice for brining and smoking that bird. Follow his advice and you'll be the hero of the dinner.

Sign up (if you haven't already) for Jeff's 5 day course. Lots of good sound information amongst those daily lessons.
