I'd like to serve a couple of Fatties on Christmas morning but I don't want to be up at 3am getting everything started. What's the general consensus on smoking ahead of time (maybe a day or two) then re-heating them before serving? I rather liked CowGirl's corned beef hash fattie recipe and I think I'd like to try an eggs benedict fattie. Will a re-heat dry it out? Maybe cook it half way on the smoker then finish in the oven? Looking forward to hearing from you.
