What else do you suggest I make out of this butt?

I have 4 pork butts I am going to make two of them into pulled pork and I was looking for suggestions on something else to make with the other two. I want to try something different.

I know one of the things that is at the top of my to-do list once santa brings me my MES is buckboard bacon. Just a thought...

Hmmm, pulled or chopped pork is about all I can think of. You can do it in the oven or in a crock pot. But if you're looking for a smoke recipie. I'm all out.

its still pulled pork, but I like making gyros.

I get some pita flatbreads and warm them up on a warm grill
Cut up some fresh lettuce, tomatoes and red onion
I make tzatziki sauce out of greek yogurt, sugar, salt, dill, and cucumbers
I make a honey mustard/yogurt sauce by mixing half honey mustard and half plain yogurt.
I toss the pork in a mixture of cider vinegar, apple juice, salt, pepper and red pepper flakes

Put a layer of tzatziki on half the pita, the other half gets the honey mustard/yogurt sauce, fill it with pork, top it with lettuce, tomato and red onion. My whole family loves it

Do a search for buckboard bacon, you will need to get some cure or tenderquick. It is excellent.

if you do gyors maybe you might try to put a little lamb in greeks does all the time great stuff a little more $ butt vary worth it
