Hi all!!

A little about me, not much to tell, I have been having a great time taking my son hunting and fishing for the last few years (started him at age 3) he is now 7 and have always liked smoking our catch. I started out with a big cheif after watching my dad smoke in a little chief for years and is still using the same one BTW. He always used his in the box so I figured I would do the same (even though it said not to). It worked great for the first few tries. Then one day I notice a little "extra" smoke going past the window on the house a quick peak out side....I had flames licking at the eves of the house. Big Chief in the box= VERY BAD IDEA. Next experience with it, I had it on our back porch which is wood and after making a batch of jerky the next day I went to put the smoker away and picked it up and low and behold we had a 6" charcoal lined hole threw the floor....Another brilliant idea on my part!!

Any way my "Big Chief" days are over I broke down and bought a Cook Shack SM 25 and so far I am still learning which is why I am here.

Tools of the trade so far:

Cabellas grinder 3/4 hp = a bit small for my liking
Cabellas jerky slicer atatchment for the grinder = havent used it yet
Cook Shack SM 25 = love it just need to learn more
Grandpas old butcher knifes = never part with them!! (just wish wife wouldnt cut on glass cutting board with them)

Wow, I thought I recognized the name. Welcome to an amazing site. Striper also recently joined but he's on the road in Texas somewhere, far, far away from his smoker. This keeps up, we're going to have to have a Smoking Meats bomb party sometime, maybe at the Hosscienda (hint, hint, Mark). Gonna be tough on Hoss though, keeping the weight down for his races, yet wanting to smoke everything in sight.

First off welcome to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
