My friends call me Hoss
I am very much a newbie and just recently broke in a Brinkman charcol smoker and gave it to a buddy of mine (who will be joining this site I am sure) and I picked up a Cabela's Premium Vertical Smoker propane smoker 48"H x 16"W x 16"D. So far it has worked great for me and I have smoked several salmon (Silvers and Pinks) and a lot of Chicken (NWDave showed me the way) and I smoked my first turkey this Thankgiving. Thank God it turned out great!!!!!!!!!
I grew up in LaConner and my dad and I had a commercial gillneting licence and his dad had a smokehouse where we used to make some increadible smoked salmon when I was a kid.
I am looking forward to leaning a ton off this site and trying out a lot of new recipies!!!!!

I am an avid hunter and fisherman and I am very much looking forward to smoking a bunch of Elk and making my own Pepperoni and summer sausage and most inmportant to smoke some tuna!!!! I fish for tuna and the belly meat is great smoked!!!! NWDave smoked a bunch for me and that is what got me fired up to start this.
Ok I am done for now......... I am awaiting my first 5 day smoking lesson to start reading!!!!!!!
 
Welcome Hoss from a fellow Washingtonian! Glad to have you hear, these guys are awesome. I myself am an avid fisherman, what a year huh?! The humpy run was CRAZY... Not my favorite fish but they smoke up nice.
 
Hoss, you're in the right place at the right time. SMF has plenty of fishermen and hunters, and we all love to smoke foods. Stick around, it only gets better.
 
First off welcome Hoss to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Yea the humpies where thick ths year!!!!!!! I have been smoking up a ton of them as well as several silvers I caught both in the river and in the saltwater.

I am a big fan of photobucket so I am up on posting pictures and I will read up on the Qview stuff. I signed up for the E-course so I have some reading to do.
This looks like a very cool place to learn from a bunch of guys who know what they are doing!!!!!!!!

How funny is this.......NWB members smoken meat!!! I signed up today and am still sniffing arround as my jerky is out side cooking.....correction....drying (Im learning). And to my suprize as I am looking at doing the "New guy Hello" I see a couple of familiar names. Hoss, NW Dave, Striper and that was just at a glance. Nice to see you guys here!!
